In an Instagram video shared on August 21, the food blogger revealed that the dish has become a regular in her kitchen, writing, “I’ve been making this on repeat. Ingredients
- 200g spaghetti
- 1 tbsp butter
- 1 tbsp olive oil
- 5 to 6 cloves garlic, finely chopped
- 1 to 2 fresh red chillies, finely chopped
- ½ tsp chilli flakes
- 1 tsp mushroom broth powder (or as required)
- 1 cup mixed vegetables of your choice, chopped
- Salt, to taste
- ½ cup cream
- ½ tsp freshly cracked black pepper
- ½ to ¾ cup grated Parmesan cheese
- ¼ cup green olives, sliced
- ¼ cup Kalamata olives, sliced
Method
- Heat butter and olive oil in a large pan over medium heat.
- Add the chopped garlic, fresh red chillies and chilli flakes. Sauté until fragrant, taking care not to burn the garlic.
- Stir in the mushroom broth powder, ensuring it combines well with the aromatics. This adds a rich umami flavour to the pasta.
- Add the spaghetti, followed by the chopped vegetables and salt. Pour in enough water to cook the spaghetti and bring to a simmer.
- Cook until the spaghetti is almost done and the liquid has reduced, stirring occasionally to prevent it from sticking.
- Stir in the cream during the final three minutes of cooking and allow it to coat the pasta.
- Turn off the heat and add freshly cracked black pepper, grated Parmesan, green olives and Kalamata olives. Toss well until the cheese melts and the sauce becomes creamy.
- Serve hot and enjoy the creamy, cheesy, garlicky and spicy pasta.
